1 lb. sweet potatoes
2 T. olive oil
¼ tsp. salt
¼ tsp. coarse ground black pepper

Directions:

1. Scrub sweet potatoes. Cut lengthwise into ½-inch thick wedges. In a 10x15-inch baking pan, mix with olive oil, salt, and pepper.
2. Bake at 450º, stirring occasionally with a wide spatula, until potatoes are browned and tender when pierced, 20-25 minutes.
