2 lbs boneless chicken thighs
2 tbsp vegetable oil
1 medium onion, chopped
1 clove garlic, minced
1 tsp coriander
1 tsp cumin
1 tsp salt
2 tsp fresh grated ginger
1 tbsp fish sauce
1 tbsp brown sugar
2-3 tsp hot oriental chili garlic sauce
2 tbsp soya sauce
2 tbsp peanut butter
398 ml can coconut milk, full fat
1 tsp lime zest
Juice of 1 lime
Green onions, chopped
Fresh cilantro or Thai basil

Preheat oven to 325º F.
Heat oil in frying pan and brown chicken (15 minutes). Set aside in a large casserole dish.
In the same frying pan sauté onion until tender. Add garlic and sauté for another minute. Stir in coriander, cumin, salt, ginger fish sauce, sugar, chili sauce, soya sauce and peanut butter. Add coconut milk and blend until smooth.
Pour mixture over chicken, cover and cook 1 hour at 325ºF. Just before serving, stir in lime zest and juice. Garnish with green onion and fresh cilantro or Thai basil.
Serve over rice.

Add more chili garlic sauce if you would like the dish spicer.
Make sure to use full fat coconut milk or the dish will be very thin. When you open the can it should have a thick layer on top.
