FOR THE GARLIC HERB CHEESE:

2 OUNCES CREAM CHEESE, AT ROOM TEMPERATURE

2 OUNCES FRESH GOAT CHEESE

1 ˝ GARLIC CLOVES, FINELY MINCED

˝ TABLESPOON FRESH TYME LEAVES, FINELY CHOPPED

˝ TABLESPOON FRESH ORGEANO LEAVES, FINELY CHOPPED

KOSHER SALT AND FRESH GROUND BLACK PEPPER



FOR THE CHICKEN:

2 SLICES BACON

2 LARGE BONELESS, SKINLESS CHICKEN BREASTS (1/2 POUND EACH) OR TENDERS

KOSHER SALT AND FRESHLY GROUND BLACK PEPPER

6 SLICES PROSCIUTTO (2 OUNCES)

2 TABLESPOONS OLIVE OIL

1 CUP CHERRY TOMATOES

FRESH THYME OR OREGANO SPRIGS (IF YOU HAVE THEM)

MAKE THE GARLIC HERB CHEESE
Step One: In a food processor (or in a bowl, by hand) combine the goat cheese, cream cheese, thyme, garlic and oregano. Season with salt and pepper to taste. The garlic will be strong but will calm down once cooked.

MAKE THE CHICKEN
Step Two: Preheat the oven to 350 degrees F. Cook the bacon in a medium cast iron skillet until crispy for about 8 minutes. Remove bacon on to a paper towel to absorb grease and to cool. Remove excess bacon fat from skillet, but leave enough to coat the pan. Let the skillet cool.

Step Three: Place one piece of chicken between two sheets of plastic wrap (I like to use chicken tenders), and use a meat mallet to pound the chicken evenly to a ˝ inch thickness. Season with salt and pepper. Repeat steps with remaining pieces of chicken.

Step Four: Take the herbed cheese and spread it on each piece of pounded chicken. Crumble the bacon to bits and top over the cheese. Roll up each chicken breast and wrap with prosciutto. If using chicken breasts, you’ll need about 3 pieces of prosciutto per chicken breast. Brush each roll with olive oil and season with salt and pepper lightly.

Step Five: Place each piece of wrapped chicken in the cooled cast iron skillet seam-side down. Scatter the cherry tomatoes around the chicken. Place a few herb springs around the skillet and back until the chicken is cooked and the prosciutto edges are crispy for about 30 minutes. About 25 minutes if using chicken tenders. Let the chicken cook and serve with the tomatoes and yummy cheesy juices.
