5 cups bread flour
2 packages active dry yeast
1 ½ cups warm water
3 Tablespoons sugar
1 Tablespoon salt
2 eggs, room temperature
1 Tablespoon sugar in 3 quarts water
Cornmeal
1 egg yolk beaten with 1 Tablespoon water

Toppings: Everything but the Bagel (Avail from Walmart), Sesame seeds, poppy seeds

In mixer bowl, combine 1½ cups of the flour and the yeast. Combine warm water, the 3 Tablespoons of sugar, and salt. Pour over flour mixture. Beat at low speed of electric mixer ½ minute, scraping bowl. Add eggs and another 1 cup of flour. Beat another minute, scraping bowl. Beat 2 more minutes at high speed. Stir in as much remaining flour you can with a spoon. (Dough should be firmer than for most other yeast breads)

Turn out onto floured surface. Knead in enough remaining flour to make a moderately stiff dough that is smooth and elastic. Cover; let rest 10 minutes. Break into 12 portions; shape each into a smooth ball. Punching a hole in the center and lightly pulling to keep a bagel shape. Place on greased baking sheet. Cover and let rise 20 minutes. Broil 5 inches from heat 1-2 minutes, turn and broil another minute. They should not brown.

Bring sugar-water mixture to boiling in a 4-5 quart pan; adjust heat to keep in boiling gently. Lightly grease 2 baking sheets and sprinkle with cornmeal. With a slotted spatula, lift one bagel into water; boil 3-4 at a time turning often. Boiling 3 minutes. Lift out of pan, drain briefly on a towel and place on baking sheet.

Brush bagels with egg yolk mixture and sprinkle with desired topping. Bake in a 400º oven for 20-25 minutes or until well browned and crusty. Let cool on a rack.
