1/2 c water
1/4 c unsalted butter, cut into pieces
1 1/2 tsp plus 3 tbsp sugar
pinch of salt
1/2 c AP Flour
3 large eggs
1 8 oz. mascarpone
3/4 c ricotta cheese
1 tsp vanilla
1/2 c nutella
1/4 c whipping cream
1/4 c hazelnuts, toasted, chopped

Preheat oven to 375º
Line a baking sheet with parchment
Combine water, butter, 1 1/2 tsp of sugar and salt in a heavy saucepan
Bring to a boil, stirring until the butter melts
Add the flour and stir for a minute
Cool 5 minutes

Crack two eggs in a measuring cup. Use a wooden spoon to beat the eggs into the dough, 1 at a time.
Spoon 10 or 12 (1 1/2 " mounds onto the baking sheet, space 2" apart
Beat the remaining egg into the bowl to blend and gently rush over the dough mounds

Bake pastries about 50 minutes. Cool completely

Mix the mascarpone, ricotta, vanilla and 3 tbsp sugar
Refrigerate until cold.
Using a serrated knife, cut the pastry and spoon the mixture and top
Combine the nutella and cream, heat in microwave for 30 seconds until warm and spoon atop the pastries.

Sprinkle with hazelnuts
