Ingredients: 3 chicken breast 75g parmesan cheese TOMATO SAUSE 1tbsp olive oil 1 onion chopped 2 garlic cloves 100ml red wine 1tsp dried oregano 400g tin chopped tomato TO ASSEMBLE 2 balls mozzarella sliced to

Directions:STEP1 To make the sauce heat the oil in a sauce pan and add the onion fry it gently until it soft then add the garlic cook for a couple of minutes then add the red wine allow to bubble fiercely until reduced by half then add oregano and tomatoes and season with salt and pepper cover the pan and simmer the sauce for 10 minutes then remove the lid and simmer for 10 minutes until you have a well reduced sauce
STEP2 pre heat the oven to fan 180ºc butterfly the chicken the put the breast between two bit of greese proff paper and flatten sligtly with mallet place on a baking tray and place in the oven for 12 to 15 mins
STEP3 To assemble take a large shallow oven dish spread the sauce in the bottom of the dish place the chicken on top and put the sliced mozzarella on top of the chicken to cover it and sprinkle parmisan on top and place in the oven for 15 to 20 mins serve with fryed potato squares |
