1 1/2 c bread crumbs
1 c flour
1 c cheese
dash nutmeg, cloves, salt and pepper
3 eggs
Add water if too dry

Francine:
4 c bread crumbs
3 c mix of pecorino and parmigiana
8 eggs
Rind from 2 lemons


OR:
2 c bread crumbs
1 c grated cheese
4 jumbo eggs
dash nutmeg, black pepper
lemon rind or juice
little flour to bind

Mix, roll, add to soup

Mix will be crumbly
Put through meat grinder but don’t use the cross shape. Francine mixes College Inn chicken and beef broth
