1 cup butter
3/4 cup sugar
4 eggs
14 oz. can creamed corn
1/4 cup crushed pineapple, drained
1 cup each of shredded jack cheese, cornmeal and flour

Directions:
Directions:

Cream the butter with the sugar. Add eggs, beating well after each. Stir in corn and pineapple, cheese and dry ingredients.

Scrape the mixture into a greased 9-inch square or round cake pan and bake in a preheated 325 oven for 1 hour.

Let cool slightly before slicing to serve.

20 minutes to prepare plus cooking time.
Serves 8-10

Though I did not attend the cooking course at Highfield Hall in Falmouth, my bridge friend, Dick O'Conner, did attend the class and he raved to me about this cornbread recipe. He is a great cook! I made the recipe a few times during Covid and it was so moist and delicious!

I have plenty of time to cook during the pandemic, but am trying not to make too many recipes for us that are high in calories. Now is a good time to eat healthy, especially because we aren't entertaining or eating out!

This is the best cornbread I have ever tasted. Enjoy!
