2 cups Bread flour
½ cup sugar
½ teaspoon salt (optional)
2 packages dry yeast
1 ½ cups water
½ cup milk
⅓ cup butter or margarine
2 eggs (room temperature)
3-4 cups Bread flour
Melted butter

Directions:
Directions:
Combine in large mixing bowl 2 cups flour, sugar, salt and yeast. (It is best to use a stand mixer with a bread dough blade.)

In a small saucepan, combine water, milk and butter. Heat until very warm (120º). Gradually add this into flour mixture. Beat 2 minutes at medium speed. Scrape bowl. Add 2 eggs at room temp and ½ of flour to make soft dough. Continue to add flour by ½-1 cup until the mixer cannot not mix anymore in.

Place dough on floured counter top and continue to knead until smooth and elastic, adding more flour as needed. Cover and let rest 20 minutes. Punch down. ***(see below)

Divide into two parts, roll out one and cut into 16 pieces (like a pizza). Roll each up like a crescent roll. Repeat with other part. Place on cookie sheet and freeze immediately. When frozen, place in Ziploc plastic bag to keep. Remove what is needed from €freezer, place on cookie sheet and let rise 1 ½ - 2 hours. Bake at 350º for 15 minutes.


*** The freezer roll was a Grandma Betty tradition. I have changed this up a bit so they are made and served fresh the same day.

Let them rise a second time until doubled in size, punch down. Divide into two parts, roll out, cut into 16 pieces, roll up like a crescent roll and place on a greased cookie sheet. Place a towel over top and let rise till doubled. Bake at 350º for 15 minutes. Half way thru baste with melted butter.

This is an absolute must at any Scott family gathering. Especially for holiday meals.

You may notice a roll missing on one of the pans. Winfield must “test” these immediately as they are removed from the oven. More would be missing if it weren’t for the plague of 2020 and small family gatherings required.
