3/4 cup shortening
1 cup packed light brown sugar
1 large egg
2 tsp vanilla
1/4 cup molasses
2 1/4 cup flour
2 tsp baking soda
1/4 tsp salt
1/2 tsp ground cloves
1 tsp. ground cinnamon
1 tsp ground ginger
1/2 cup granulated sugar for rolling cookies

Directions:

In a large bowl with an electric mixer, beat shortening and brown sugar until light and fluffy, about 3 minutes. Add in egg, vanilla and molasses and mix until fully combined.

In a medium bowl, whisk together the flour, baking soda, salt, cloves, cinnamon and ginger. Slowly add dry ingredients to the shortening mixture and mix until just combined. Cover and refrigerate for at least 1 hour.

When you're ready to bake, preheat oven to 375º and line 2 baking sheets with parchment paper. Using a medium cookie scoop (about 1 1/2 tablespoons) roll dough into balls and then roll into granulated sugar to coat. Place dough balls 2 inches apart on prepared baking sheets. Bake in preheated oven for 10-12 minutes. Allow cookies to cool on baking sheets for about 3 minutes before removing the cookies to a wire rack to cool completely.

I found some coarsely ground sugar on Amazon that I like to use instead of the granulated sugar. I think it makes the cookies look more professional and adds a nice crunch.
