3 large eggs
2 cups sugar
1 cup vegetable oil
2 tsp. vanilla extract
2 ¾ cups all purpose flour
1 tsp. baking soda
1 tsp. salt
2 tsp. cinnamon
4 cups apples, peeled and chopped
1 cup chopped pecans

Directions:
Directions:
Beat eggs and gradually add sugar.
Add oil and vanilla and beat at low speed until well blended.
Combine flour, soda, salt and cinnamon and add to beaten mixture.
Stir in apples and pecans.
Pour batter into well greased 10 inch tube pan or large Bundt pan.
Bake at 350º for one hour and 25 minutes.
Cool on rack for 5 minutes before turning out onto cooling rack.

Louise Hays was an older, lovely nurse that I worked with at East Ridge Hospital in Chattanooga. She was delightful and shared my love of baking. She baked this cake for me and then gave me the recipe. It is a wonderful recipe for fall when fresh apples are plentiful and flavorful.
