6 eggs
1 tsp. vanilla
1 1/2 cups sugar
2 Tbs. corn starch
1 qt. milk
1 can evaporated milk
1/2 can water

Directions:
Directions:
Place eggs, vanilla, sugar, corn starch and milk in a large double boiler. Cook mixture until it thickens like a custard (e.g. it reaches 170º or it coats the back of spoon). Remove mixture from heat. Cover and refrigerate until well chilled for several hours or overnight. Once the mixture is cool, add evaporated milk and water. Add desired fruit such as bananas, peaches or strawberries. If using peaches or strawberries, add a small amount of sugar to the fruit before adding to mixture. Place in ice cream freezer and freeze according to manufacturer's instructions.
