Pasta Salad

5 pkgs. beef or chicken ramen noodles
2 bunches green onions, chopped
1 can sliced water chestnuts, drained
1 box cherry tomatoes, halved — or 2 medium tomatoes, seeded and chopped
1 small red or orange pepper, chopped

Directions:
Directions:
Break noodle blocks in half and add to large pot of boiling water (reserve seasoning packet for dressing). Stir to break up. Boil 2 minutes and drain.

Place drained noodles in a large bowl, add ⅔ of dressing and stir. Chill to cool before adding the veggies.

After cooling, stir in onions, water chestnuts, peppers, and remaining dressing. Arrange tomatoes on top and serve.

¼ cup apple cider vinegar
¾ cup olive oil
3 to 4 seasoning packets from soup
1 tbsp. dijon mustard

Add all ingredients to a jar and shake.

Using more packets of seasoning will make it saltier. Use fewer packets if you don't want it too salty.
