Cake:
2 C flour
2 C sugar
2 t baking soda
1 t salt
1 C vegetable oil
4 eggs
2 t cinnamon
3 C carrots, grated

Icing:
1 8 oz. pkg cream cheese
1 stick margarine
1 box powdered sugar
2 t vanilla

Directions:

Cake:
Sift and mix dry ingredients.
Add oil and stir well.
Add eggs, (one at a time), then add carrots and cinnamon.
Pour into 2 - 9" cake pans that have been sprayed, lined with wax paper, and sprayed again.
Bake at 350º for 45 minutes.

Icing:
Beat well, and spread on Carrot Cake.
