1 Tablespoon Vegetable oil
1 cup sliced red onion
1 cup sliced fresh mushrooms
2 cups shredded fresh spinach
1 cup cooked chopped Italian sausage
6 eggs, beaten
1 cup shredded pepper jack cheese
Kosher salt and pepper to taste
4 cheese biscuits, cut in half

Directions:

Heat oil in a large skillet over medium heat. Stir in red onion and cook 3 to 4 minutes.

Stir in mushrooms, spinach, and cooked sausage, stirring and cooking for 2 more minutes.

Stir in beaten eggs and cook, pushing the eggs to the center of the pan with a heat resistant spatula for about a minute.

Stir in cheese and cook until eggs are done, but not dry. Salt and pepper to taste. Spoon egg mixture over warm open-faced biscuits and serve.
