1# Cavatelli, cooked al dente
3 T olive oil
4 C diced tomatoes (cherry, grape, or plum) large dice
½ t salt (more or less)
¼ t pepper
2 t fresh garlic, minced
1 T sugar (more or less)
½ C dry white wine
½ C Romano or Parmesan cheese, grated
1 C fresh basil, chiffonade

Directions:
Directions:
Heat the olive oil to a high heat in a large saucepan.
Add the diced tomatoes, salt, pepper, and sugar.
Cook for a few minutes and add the garlic.
Cook for a few more minutes and add the wine.
Reduce the liquid to about half volume.
Add the cooked Cavatelli, basil, and cheese.
Stir and heat through.
If the mix is too dry, add a little water.
