1˝ - 2 pounds chicken thighs (boneless)
salt and ground pepper to taste
3 tbsp. honey
3 tbsp. dijon mustard
1 tbsp. soy sauce
˝ cup chicken broth
1 tsp. olive oil
5 cloves garlic
1 tbsp. chopped parsley

Directions:
Directions:
1. Season both sides of chicken with salt and pepper.
2. Mix the honey, dijon mustard, soy sauce and chicken broth together. Stir to combine.
3. Sauté in olive oil in the instant pot. Add oil when the pot is hot so chicken will not stick. Pan sear both sides, skin side down first until golden brown.
4. Add the garlic to the pot, followed by the honey mixture. Cover with lid and close the vent. Select manual and high pressure for 10 minutes. When the timer beeps, do a quick release. When the valve drops, add the parsley. You can thicken the sauce if you like.
5. Serve over spaghetti or rice.
