3 quarts water
4 teaspoons salt, divided
2 cups elbow macaroni
4 tablespoons butter
¼ cup flour
2 cups milk
⅛ teaspoon cayenne pepper
2 cups cooked ham, cut into ¼-inch dice
1 ¾ cups grated cheddar cheese
1 tablespoon grated onion
2 tablespoons dry breadcrumbs
2 tablespoons melted butter

Directions:
Directions:
In a large pot, bring the water and 1 tablespoon salt to a boil over high heat. Pour the macaroni in slowly so that the water never stops boiling. Cook briskly, uncovered, until tender. Then drain thoroughly.

Melt butter in a small saucepan. Add flour and cook, stirring with a wire whisk, until the mixture froths and foams. Add milk and whisk until the sauce thickens and is smooth. Add cayenne and remaining salt, simmer on very low heat for 2 minutes. Pour sauce into large mixing bowl, and stir in the macaroni, diced ham, 1 ½ cups of the cheese, and the grated onion. Taste for seasoning.

Preheat oven to 375°F. Lightly butter a 2 ½ or 3-quart casserole. Spoon in the macaroni mixture. Mix breadcrumbs with the remaining cheese and melted butter and spread the mixture evenly over the top. Bake for 30 to 40 minutes. Serve directly from the casserole.
