Beef Enchiladas Recipe

2 lbs. lean ground beef
28 oz. can Old El Paso Enchilada Sauce
2 cups shredded Mexican cheese
1 pkg. Taco seasoning
1 diced onion
1 can mild Rotel diced tomatoes and green chilies
flour tortillas

Directions:
Directions:
Heat oven to 375º. Spray a 13x9 baking dish with Pam.
Brown the beef and onion and drain. Add taco seasoning and the tomatoes with chilies. Cook another 5 minutes. Add just a little over 1 cup of the enchilada sauce and 1 ½ cups of cheese to the mixture.

Pour 1 cup of the enchilada sauce into the casserole dish. Spoon onto the flour tortillas; roll up and place seam side down into the dish. Pour the remaining sauce over the top of the tortillas and sprinkle with the remaining cheese.
Bake 15 - 20 minutes or until hot and bubbling.
