2 very ripe bananas
¾ c. unsalted butter, soft
1⅓ c. sugar
2 tsp. vanilla
2¼ c. flour
1 tbsp. baking powder
pinch of salt
For rolling: ½ c. sugar plus 1 tbsp. cinnamon and/or 1 c. sprinkles

In a large mixing bowl, mash bananas, then beat with butter, sugar, and vanilla on medium speed until smooth. Gradually add flour, baking powder, and salt, beating as you go on medium speed, just until dough comes together.

Put bowl in the refrigerator for at least 30 minutes or up to overnight.

When dough is ready, heat oven to 350 degrees. Line baking sheets with silicone mats or parchment paper.

In a small bowl, combine sugar and cinnamon. Put sprinkles in another bowl if using.

Scoop chilled dough into 1- to 2-inch balls and rolls in either cinnamon-sugar mixture or sprinkles. Place at least 2 inches apart on baking sheets. (These will spread, so don't cram too many cookies onto the sheet at once, especially if your cookies are large. I baked 9 cookies on 1 sheet.)

Bake for 9 or 10 minutes, or until cookies are just set and very lightly browned. Remove from oven, let sit on cookie sheet for 1 minute, then move to a wire rack to cool.
