4 tbsp. bread crumb
7 flour tortillas
2 onions chopped
2 red bell peppers chopped
1 stalk thyme chopped
1 tomato chopped
1 peeled avocado sliced in several pieces
3 tbsp. coconut oil
1/4 sea salt

Jamaican Curried Chicken and Avocado Tortillas is a delicious dish with a unique flavor that is sure to please. This dish is also easy to make and requires only a few ingredients.

To start, take the boneless chicken and chop it into small pieces. Place the pieces into a large bowl and add 5 tablespoons of curry powder, 4 tablespoons of bread crumbs, and a pinch of salt and pepper. Mix all the ingredients together until well combined.

Next, heat a large skillet over medium-high heat. Add 3 tablespoons of coconut oil to the skillet and let it heat up. Once the oil is hot, add the chopped onions, red bell peppers, and thyme to the skillet and cook for about 5 minutes.

Add the chicken to the skillet and stir to combine. Allow the chicken to cook for about 10 minutes, stirring occasionally. Once the chicken is cooked through, remove from heat and set aside.

Warm the tortillas in the oven or microwave for a few minutes. To assemble the tortillas, place a few slices of avocado onto one side of the tortilla. Add some of the cooked chicken to the other side and top with the cooked onions, bell peppers, and tomato.

Fold the tortilla in half and enjoy! Jamaican Curried Chicken and Avocado Tortillas are a great meal for any time of day and can easily be adjusted to fit your tastes. Enjoy!
