1½ lb. (or 2½ c.) cooked and drained Italian sausage
16 oz.(or 1½ c.) frozen chopped spinach, thawed, drained and squeezed dry
2 c. small curd cottage cheese
12 oz. (approximately 3 c.) shredded sharp cheddar cheese
1 small chopped onion, sauteed in sausage pan
2 T. parsley, chopped
6 eggs, beaten
½ c. butter, melted
8 oz (½ package) phyllo pastry (about 20 pieces)
½ c. roasted garlic (optional)
1 tsp. basil (optional)
½ tsp. fennel (optional)

Directions:

Prepare 9 x 13 pan, brush with butter.

Cook and drain sausage.

Sauté onion until translucent in the sausage pan.

Mix together first 7 ingredients (and optional herbs if using).

Brush each phyllo layer with butter. Place 10 leaves in a 9 x 13-inch pan.

Cover phyllo with filling.

Top with 10 leaves of phyllo brushed with butter.

Cut into 15 equal pieces with a sharp knife.

Bake uncovered for 55-65 minutes at 350º F until golden brown.

Let stand for 10 minutes before cutting.

Tip: Cover phyllo with towel until buttered. If you do not work fast enough, it can dry out!
