"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain

Ingredients:
Ingredients:
chicken (We like only breasts) bone in or out
oil for sauteing chicken
onion, chopped
garlic
salt
pepper
sage or poultry seasoning
carrots cut into bite size pieces
celery chopped
chicken broth

Directions:
Directions:
Saute chicken with onion and spices and celery. Add carrots on top and put broth in pan and simmer until chicken is tender and carrots are done.

Remove carrots and chicken from pan and use flour and broth to thicken the gravy. I like to use an immersion blender and use corn starch instead of flour if I have it because like my momma said, it makes a prettier gravy.

Serve over rice, potatoes or noodles.
