250 g butter
1/4 cup oil
2 tsp vanilla essence
3/4 cup icing sugar
1/3 cup corn flour or maizena
2-3 cups Flour
1/2 cup desiccated coconut (optional)
1/4 cup sugar ( optional)
1/2 -1 cup jam apricot, strawberry or raspberry

Directions:

1 Mix first 4 ingredients until creamy
Add cornflour and flour a little at a time until you have a soft pliable dough.

2 Press down 3/4 dough into a greased baking tray.
Spread jam evenly over the dough and then sprinkle coconut over the jam.

3 Grate the remaining 1/4 dough over the coconut and jam.

Spread 1/4 cup sugar over the top. This is optional

4 Bake in preheated 350 degree oven for about 15 minutes.

5 Remove from oven, check to see if it is baked completely - if not return to oven
Allow to cool completely .

6 Cut into squares with sharp knife
