4 artichokes, trimmed
2 lemons
2 garlic cloves, minced
1 cup Parmesan cheese
1 ½ cup breadcrumbs, seasoned
Olive oil
Salt
Pepper
Fresh parsley, chopped
Chicken stock

Directions:
Directions:
Drop artichokes in simmering water with one lemon cut in half. Cook until leaves are nice and tender, about 20 minutes.

While artichokes are simmering, mix together, garlic, Parmesan cheese, bread crumbs, olive oil, salt, pepper and parsley.

When artichokes are done, discard lemon, trim stems, open them up and place upright in pan. Fill the artichokes with stuffing getting in between all leaves and middle. Drizzle top with olive oil. Pour chicken stock in bottom of pan.

Bake at 350º for 20 minutes. When you take them out, spoon juices on bottom of pan onto top of artichokes. Squeeze lemon juice from lemon on top and serve.
