8 Large Potatoes (Preferably White)
6 Large Eggs
½ Sweet Onion
3 Stalks Celery
½ Bell Pepper (Any Color Will Do)
1 Cup Mayonnaise
⅓ Cup Lemon Juice
1 Teaspoon Sugar
1 Teaspoon Salt
½ Teaspoon Black Pepper

1. Hard boil eggs. Cool, peel and chop.
2. Peel, quarter and boil potatoes just until a knife inserted into the center of the potato has just a little resistance. Do not overcook! Let cool.
3. Chop onion, bell pepper and celery into desirable sized pieces.
4. Place chopped eggs, onion, bell pepper and celery into a large bowl. Dice cooled potatoes into bowl. Gently mix.
5. In a small bowl add remaining ingredients. Mix well. Taste and adjust seasoning and or mayonnaise and or lemon juice.
6. Add about 1/2 of mayonnaise mixture to potatoes. Mix gently. Add mayonnaise mixture in small amounts until desired consistency is obtained. Refrigerate for an hour or more.
7. Enjoy!

I learned the hard way to make the mayonnaise dressing separately and add to dry ingredients. Sometimes the dressing comes out way too liquid and if you add all at once it ruins the salad.
