2 cups all-purpose flour
1 cup white sugar
2 Tbsp cornstarch
1 tsp baking powder
1 tsp grated nutmeg
½ tsp salt
1 cup buttermilk
2 large eggs
1 tsp baking soda
1 tsp vanilla extract
4 Tbsp shortening, meltedand cooled slightly
1 cup sifted powdered sugar

1. Spray a donut pan with cooking spray
2. Sift flour, sugar, cornstarch, baking powder, nutmeg and salt together in a large mixing bowl.
3. Whisk buttermilk, eggs, baking soda and vanilla extract together in a smaller bowl.
4. Pour melted and cooled shortening into the flour mixture and stir until absorbed. Add buttermilk mixture and mix well. Let batter rest for 10 to 15 minutes.
5.place approximately 3 Tbsp of batter into the well of each donut cup in the prepared pan. Smooth with the back of a spoon to distribute evenly.
6. Back in a 375ºF oven on an upper-middle rack until golden brown, 12 to 15 minutes. Remove from oven and cool in pan 2 to 3 minutes, then remove donuts and cool on a wire rack.
7. Put powdered sugar in a bag. Toss warm donuts in and toss to coat.
