2 lbs carrots peeled. 4 lbs.bomeless lamb roast cut into 1 1/2 chunks 2tbsp flour tbsp olive oil. salt pepper 2 large onions peeled and chopped 1 tbsp mined thyme and 1 tbsp minced rosemary 3 bay leaves 2 cups chicken broth 2 lbs. Yukon gold potatoes peeled cut 3/4 chunks 1/2 cup chopped parsley 1 can beer.

heat oven to 325 degrees cut 1/2 carrots in fine chunks and 1/2 into 1-inch pieces. set aside In a bowl toss lamb with pepper flour salt In a dutch oven heat oil add lamb and cook until deep brown about 4 minutes turn over and do same to another side. Transfer to bowl Leave fat in a dutch oven and transfer carrots onions thyme rosemary bay leaves and salt. Cover and cook stirring occasionally about 6 minutes Add chick broth adjust heat to med-low and scrape the bottom of pot ADD lamb and juices cover and bake 1 hour. Now add potatoes and 1-inch carrots to pot cover and bake another 1 1/2 hours Adjust seasoning Add beer 1/2 hour before removing from oven. Remove bay leaves and parsley. serve.
