1 lb. Ground Beef, browned and drained
1 Can (17 oz) Whole Kernel Corn, drained
1 Can (14 oz) Tomato Sauce
1 Cup Salsa/Picante Sauce
1 Tablespoon Chili Powder
1½ Teaspoon Ground Cumin
1 Carton (16 oz) Low-Fat Cottage Cheese
2 Eggs, slightly beaten
¼ Cup Grated Parmesan Cheese
1 Teaspoon Crushed Oregano Leaves
½ Teaspoon Garlic Salt
12 Corn Tortillas
1 Cup Shredded Cheddar Cheese

Preheat oven to 375º. Combine first six ingredients in large skillet. Simmer 5 minutes, stirring frequently. In a separate bowl combine cottage cheese, eggs, Parmesan cheese, oregano and garlic salt; mix well. Arrange 6 tortillas on bottom of lightly greased baking dish (13 x 9 x 2) overlapping as necessary. Top with ½ of the meat mixture, spoon cheese mixture over the meat. Arrange remaining tortillas over the meat and top with remaining meat mix. Bake in oven about 30 minutes or until hot and bubbly. Remove from oven, top with grated cheddar cheese. Let stand for 10 minutes before serving with additional picante sauce.
