1 1/3 cups sifted pastry flour
2 tbsp sugar
1/4 tsp salt
1 1/3 cups milk
1/4 cup cooled melted butter
1 tsp vanilla
1/2 to 1 tsp grated orange or lemon rind

Beat eggs in a small beater bowl. Stir in the sifted dry ingredients. add the milk slowly. stir in remaining ingredients, mixing until smooth. Let batter stand for at least 30 minutes to improve texture. Some french chefs insist on 2 hours for this ripening process. Melt 1 tsp butter in heavy 5 inch frying pan. when hot and bubbly, but before it starts to burn, pour in about 2 tbsps batter or enough cover pan bottom thinly. Cook 1 minute, turn and cook other side. Remove crepe, sprinkle with sifted icing sugar, roll up and keep warm while you cook the rest of the pancakes. Makes 16 to 18 pancakes. Add sliced sweetened fresh peaches and whipped cream or your favorite fruit sauce.

Fold in Hot Orange Sauce
Cream together 1/3 cup soft butter, 2/3 cup sifted icing sugar, 1 tbsp grated orange rind, 1/2 cup orange juice and 3 tbsps curacao. Cover and heat in a skillet or chafing dish, let come to the bubbly point before adding folded or rolled crepes. Serve on flat warm dessert plates, spoon a little hot sauce over each.
