Panko-Crusted Salmon Recipe

2/3 cups Panko crumbs
2 Tbsp. minced parsley
1 fsp.lemon zest
Kosher salt and freshly ground black pepper
2 Tbsp. olive oil
Four 6-8 oz. salmon fillets, skin on
2 Tbsp. Dijon mustard
2 Tbsp. vegetable oil
Lemon wedges for serving

Preheat the oven to 425º

In a small bowl, mix together the panko, parsley, lemon zest, 1/2 tsp. salt, and 1/2 tsp. pepper. Drizzle with olive oil and stir until crumbs are evenly coated. Set aside

Set the salmon fillets, skin side down, on a board. Generously brush the top of the fillets with mustard and then sprinkle with the crumb mixture, Press the panko into the mustard.

Heat the vegetable oil over medium-high heat in a 12" cast-iron skillet. When the oil is very hot, add the salmon fillets, skin side down, and sear for 3-4 minutes, without turning, to brown the skin.

Transfer the skillet to the oven for 5-7 minutes until the salmon is almost cooked and the panko is browned, over with aluminum foil, and allow to rest for for 5-10 minutes.

Serve hot or warm with lemon wedges.
