Mini Quiche Recipe

Ready made pie crust or homemade pie crust
6-8 slices bacon fried and crumbled
½ C Swiss cheese shredded
3 T minced onion
2 eggs
1 C whipping cream or ½ &½
¼ tsp salt
½ tsp sugar
Dash cayenne pepper

Directions:
Directions:
Preheat oven to 375º
Cut pastry in 1½-2 in rounds.
Fit into mini tart pan
Combine bacon, cheese and onion
Put 1 T bacon mixture into crust.
Beat eggs slightly and add remaining ingredients and mix
Pour 1 T cream mixture into cups over bacon
Bake 20-25 minutes
Let cool in pan for 5 minutes before removing

I like to use the crust recipe for pecan tarts, it goes much quicker.
if you can find a ketchup or mustard squeeze bottle and cut the top off a little putting the cream mixture in the pans goes much quicker and a lot less messier
Can be made ahead and frozen before baking add a little baking time.
Can also be made ahead baked and then wrapped in foil and heated at 350 degrees for 10 minutes.

Betty Schoech made a lot of these for showers and weddings and sure she made for Kim & Mickie's showers.
