Ingredients: 1 kg mutton pieces on bone 1 large onion chopped 3-4 cloves 2 cinnamon sticks 1 star aniseed 1 tsp fennel seeds 2 tsp minced fresh ginger and garlic Lemon juice 2 -3 tsp masala as per preference 1 tsp tumeric 1 tsp coriander and cumin (dania/jeera) 2 bay leaf 1 large tomato chopped 3-4 med potatoes in halves Half cup frozen peas (optional) 500 ml water 3 tsp oil Salt to taste Cilantro for garnish

Directions:1 Add cinnamon stick, cloves,star aniseed and fennel to dry pot on medium heat until fragrant then add oil and onions and fry until onions are slightly brown before adding turmeric and masala and coriander/cumin ( dania/ jeera) and curry leaves.
2 Add some lemon juice and ginger /garlic to meat that has been cut up and washed.
3 Add meat and salt,mix well and allow to cook for 20 minutes until juices from meat can be seen. If too dry add some water at discretion
3 Add potatoes, peas and tomatoes and some water if dry. Cook for further 15-20 minutes until potatoes are soft.
4 Garnish with cilantro and serve hot.

Notes: Note that mashing a potato in the pot creates more gravy. Lamb needs to be cooked low and slow at 30 to 54 minutes until tender.
