1 4-ounce can OrtegaŽ Fire Roasted Mild Diced Green Chilies, drained
1 4-ounce jar diced pimientos, drained
1 4.25 ounce chopped black olives, drained
1 bunch green onions, thinly sliced
4 burrito size flour tortillas
1 8-ounce cream cheese, softened and room temperature
1 cup mild or medium cheddar cheese, finely shredded (see below under optional)
1 cup Monterey Jack cheese, finely shredded (see below under optional)

Optional:
Can use 1 package of Colby Jack finely shredded cheese (Small bag usually equals 2 cups) Keep in mind that freshly shredded cheese from a block of cheese will taste better.

In a small bowl, combine green chilies, pimientos, olives, and green onions and toss together. On a flat surface, using one tortilla at a time, spread the softened cream cheese using about 2 ounces over the tortilla almost to the edge. Using heaping 1/3 cup of the green chili/pimiento mixture, sprinkle evenly over cream cheese. Sprinkle the tortilla evenly with a small handful (1/4 cup) each of cheddar and Monterey Jack or the pre-shredded Colby Jack cheese (1/2 cup total of cheese). Lightly press all ingredients into the cream cheese layer using back of a spatula. (Refer to picture above for guidance). Roll up tortilla tightly and wrap in plastic wrap or foil. Continue to make the other tortillas. Refrigerate tortilla rolls for 1 to 3 hours.

Remove tortillas from refrigerator one at a time and with a sharp knife, cut each roll into 1-inch slices and place on a nice serving platter. May serve with favorite salsa if desired.

Perfect for serving at an Oscar Party, Superbowl, potluck, or an hors d'oeuvre table.
Back in the 70's and early 80's, mom would make these for the guest when we would have a party at the house, and they would be gone by the end.
Mom and I made these once for a potluck dinner at Silent Valley Club and they were a hit! Perfect for those who are vegetarian!
