1 cup butter, softened
1 cup granulated sugar
2 tablespoons milk
1 teaspoon vanilla extract
2-1/2 cups all-purpose flour
1-cup red candied cherries, finely chopped
1/2 cup pecans, finely chopped
1 cup flaked coconut

Directions:
Directions:
In a large mixer bowl beat butter till softened, about 2 minutes. Add sugar and beat till fluffy, about 3 to 4 minutes . Add milk and vanilla and beat well. Add flour and beat until well mixed. Stir in cherries and pecans.

Split into three equal lumps of dough. Shape each into three 7" rolls. Roll in coconut to coat. Wrap and chill for several hours or over night.

Preheat oven to 375º F. Line baking sheets with parchment paper.

Cut into 1/4" thick slices. Place on prepared cookie sheet about 2 inches apart. Bake about 12 minutes, rotating baking sheets halfway through baking time, or until lightly brown on edges. Remove from baking sheets and place on wire baking racks to cool. Store in airtight containers.
