6 oz uncooked linguine
2 T butter
1 T olive oil
2 medium zucchini, thinly sliced
1/2 lb. mushrooms or other produce ( red pepper etc)
1 large tomato chopped
2 green onions chopped
1 garlic clove minced
1/2 t salt
1/4 t pepper
1 C shredded cheese
3 T parmesan cheese
2 t minced fresh basil
Can also use chives, parsley etc.

Cook Linguine. In large pan, heat butter and oil. Add Zucchini and mushrooms. Saute 3-5 minutes. Add rest except cheese. Reduce heat and simmer for 3 minutes. Add cheese, pour over pasta and toss.
