2 packages of frozen chopped spinach
6 cloves of chopped garlic
½ stick of pepperoni chopped
olive oil
Sprinkle of crushed red pepper
1 pound of fresh dough
1 can of sliced olives

Directions:
Directions:
Preheat oven to 400º.
1. Let dough rise in a warm place for at least 3 hours. (I place dough in a greased bowl with a dish towel over it in the oven or microwave)
2. Sauté pepperoni and chopped garlic in a sauce pan with 2 tablespoons of olive oil until garlic is cooked.
3. Thaw and cook spinach as directed on package.
4. Mix spinach with garlic and pepperoni mixture, add salt and crushed red pepper to taste. Stir in olives.

Cut dough into 10 or 12 small pieces. Flatten dough with fingers and place a scoop of spinach mixture in the center. Fold up ends to seal and placed onto a greased baking pan. Drizzle spinach pies with olive oil and sprinkle with Monterey Jack’s seasoning.

Place in preheated oven for 15 minutes. Continue to cook at five minute intervals until tops are golden in color. Cool on a wire rack.

Spinach tastes better when it is made the day before you make the spinach pies.
I typically prepare my spinach pies onto a piece of foil. I then preheat my pan in the oven and slide the foil onto the preheated pan, this helps the dough cook thoroughly.
