1½ cups Pearl Onions, peeled
2 Tablespoons Butter
1 Tablespoon Olive Oil
3 Tablespoons Sugar
¼ cup White Vinegar
¼ cup Sherry or White Wine
Salt to taste (Omit if using salted butter)

Directions:
Directions:
Melt butter with oil in a large skillet over medium heat. Add pearl onions and sprinkle with sugar. Saute about 30 minutes until onions are softened and golden brown. Increase heat to high, stir in vinegar and cook until liquid is reduced by half. Reduce heat to low. Add wine and cook about 10 minutes, stirring occasionally until onions are caramelized and liquid is syrupy.

Serving Tip: Delicious served over steamed or roasted vegetables, such as green beans or asparagus.

Pearl onions are difficult to peel. The skin will come off easily during the first step of sauteing the onions with the sugar.
