1 cup All Purpose Flour
2 Tablespoons Sugar
2½ teaspoons Baking Powder
½ teaspoon Salt (omit if using salted butter)
1¼ cup Milk
3 Tablespoons unsalted Butter, melted
1 large Egg, slightly beaten
Vegetable Oil

Directions:
Directions:
Mix together the dry ingredients. Mix in the milk, melted butter and egg. Mix just until moistened. Lumps are OK. On medium high heat, brush the pan or griddle with oil. Use ¼ cup of batter for each pancake. Cook until bubbles form on the top. Flip and cook until done. Enjoy with butter, maple syrup, powdered sugar, jams or apple butter.
