4 C fresh strawberries
2 C sugar
6 T cornstarch (rounded)
1 tsp baking powder
1 pint whipping cream
1 tsp vanilla
¼-½ c powdered sugar
9" pastry shell

Directions:
Wash berries and drain well on paper towel. Combine in saucepan 2 c berries, sugar, cornstarch and baking powder. mash berries with potato masher. cook over low heat, stirring constantly until cornstarch is cooked about 8 minutes. Set aside to cool.
Arrange remaining berries in pastry shell pour cooled mixture over berries.
Refrigerate several hours.
Cool cream, bowl beaters in freezer for a few minutes then; beat until almost stiff, then add sugar & vanilla continue mixing on high until stiff.


The recipe says to add red food coloring to cooked berries to make a bright more appetizing looking filling, which it does.

I have altered this recipe:
6 C frozen strawberries
3 C sugar
9 T cornstarch
1 1/2 tsp baking powder
Microwave berries and sugar until sugar is melted and berries are no longer frozen
Mix cornstarch in a little water until a paste; add to berries and stir; microwave on a low to medium power every 2-3 minutes stirring or whisking until thick.
By using frozen strawberries you don't need the food coloring.
This makes a much taller pie
Cool Whip could be used instead of whipping cream
