Salt (1/2 tsp/pint)
Lemon juice (or vinegar)

Directions:
Blanch tomatoes to remove skin. Cut into chunks, remove as much seeds and juice as possible. Add salt. Simmer. With slotted spoon, scoop tomato solids into blender and purée. (Save remaining tomato juice for cooking). Returned puréed tomatoes to pot and bring to gentle boil. Add 1/2 Tbls lemon juice to each jar. Fill hot jars to 1/2 from top. Put on lids

Place filled jars in hot water bath and boil for 40 for pints.
