1 small yellow onion
½ c. panko breadcrumbs
1 lb. ground beef or chicken
1 small zucchini
1 small carrot
1 lg. egg
1 T. minced garlic
½ tsp. each oregano, thyme, salt, and pepper
2 tsp. Worcestershire Sauce
1 to 2 T. oil for frying

Directions:

Grate the onion into a large bowl using a box grater or mandolin. Add panko and mix to coat in the onion juices. Grate zucchini and carrot into same bowl. Add remaining ingredients except oil and mix well. Scoop up about ¼ c. of mixture and form 10 to 12 small patties about ⅔ inch thick.

Heat oil in a heavy skillet over medium heat. Brown patties on each side (about 4 minutes per side) until dark golden brown. DO NOT PRESS or you will press out the juices. Repeat until all patties are cooked.

Serve with ketchup and condiments of choice on small slider rolls with plenty of napkins!

In Australia they call these Rissoles. Don't worry about the veggies, you won't even know they're there except they keep the ground meat really juicy.
