1/4 c. coconut flour, divided
2 tbsp. cornstarch
1/3 c. sugar
1 1/2 tsp. baking powder
1/4 tsp. baking soda
3/4 c. almond milk
2/3 c. unsweetened applesauce
1/4 c. melted coconut oil, divided
1 tbsp. apple cider vinegar
1 tsp. vanilla extract
1/2 c. almond flour
1/4 c. coconut sugar
2 tbsp. maple syrup
2 tsp. cinnamon
3/4 tsp. sea salt, divided

Preheat oven to 350ºF. Line 12 muffin tins with paper liners. Streusel: Melt 2 tbsp. coconut oil. Mix 2 tbsp. coconut flour, almond flour, coconut sugar, coconut oil, maple syrup, cinnamon, and 1/4 tsp. of sea salt in a small bowl and set aside. Batter: Melt remaining 2 tbsp. of coconut oil and set aside to cool. Mic oat flour, remaining 2 tbsp. of coconut flour, cornstarch, sugar, baking powder, baking soda, and 1/2 tsp. of salt in large bowl. Next, mix almond milk, applesauce, cooled coconut oil, apple cider vinegar, and vanilla extract in a small bowl. Mix the wet into the dry ingredients. Scoop batter into prepared muffin tins and spoon equal portions of streusel on top. Bake for about 25 minutes until toothpick comes out dry.
