Fresh okra
Plain corn meal or corn meal mix
Vegetable oil
Salt and pepper to taste

After washing okra, cut off the tops of each pod and then slice in pieces about 1/2 inch. Place cut okra in a bowl and sprinkle generously with corn meal, stirring until all is coated.
Heat cast iron skillet over medium heat and add oil enough for the amount of okra you are cooking. The oil does not have to completely cover all the okra. Test the temperature of the oil by adding one piece of okra. When oil is hot enough the okra should sizzle when added to the pan.
Use a slotted spoon to add okra to pan, shaking off extra corn meal.
Gently stir once to make sure all is coated with oil. Salt and pepper to taste.
Cover and allow to steam for about 3 minutes.
Uncover and continue cooking until crispy and as dark as you like. I cook mine until it is browning to assure it is crispy. As it cooks, gently stir frequently being careful not to tear up the pieces.
Remove from heat and use a slotted spoon to remove okra and. place on paper towels to drain before serving.

The most tender okra are the smaller pods. Larger pods can sometimes be tough.
You can fry it in other types of skillets but cast iron is preferred as it maintains the heat and does not stick if properly seasoned.
