4-5 chicken breasts, boiled and de-boned
8 ounce sour cream
1 can cream of chicken soup
1 roll Ritz crackers
1 stick butter
1 tbsp. poppy seeds

Directions:
Directions:
Place de-boned chicken in a 13 x 9 casserole dish.
Salt and pepper chicken to taste.
Mix the sour cream with the can of soup and spoon over top of chicken.
Crush the roll of Ritz crackers and melt 1 stick of butter.
Combine the Ritz crackers, butter and poppy seeds and top chicken.
Bake at 350º for 30 minutes.

This is a great dish to take to a potluck dinner or when taking dinner to a friend. You can assemble it ahead of time and then bake when you are ready.
It is good alone but also can be served over rice or pasta.
