"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain

Ingredients:
Ingredients:
½ - ¾ cups sugar
3 tbsp flour or cornstarch (Either will work but cornstarch blends easier)
⅛ tsp. salt
cherry juice from one can of cherries
2 tbsp. butter
2 cans red sour pitted cherries
¼ tsp. almond flavoring
1 box Pillsbury refrigerated pie crusts

Directions:
Directions:
Preheat oven to 450º F.
Line a pie plate with one of the pie crusts as directed.
Drain both cans of cherries, reserving the juice from one can.
Combine sugar, flour or cornstarch, cherry juice and salt.
Bring to a boil and cook until thickened.
Remove from heat and gently stir in cherries and almond flavoring.
Pour into pie crust and dot the top with pieces of the butter.
Top with the second pie crust or you can cut it into strips to make a lattice crust.
If you use a non-lattice crust, put slits in several places to allow steam to escape.
Pinch edges of crusts together and flute the edge.
Bake in center of oven for 10 minutes, then reduce heat to 350º F and continue baking for 30 minutes or until golden brown.
Let pie cool before serving.
