Soy Garlic Sauce
1 cup dark brown sugar
2 tablespoons soy sauce
2 tablespoons mirin
2 tablespoons water
1 teaspoon rice vinegar
1/2 teaspoon garlic powder

Spicy
1 tablespoon plus 2 teaspoons gochujang (Korean red chili paste)
2 teaspoons fine gochugaru (Korean ground red pepper)
Chicken
5 ounces (1 cup) all-purpose flour, plus 1 more cup for breading
1/4 teaspoon plus 1/8 teaspoon baking soda
1 1/3 cups water
20 chicken wings (drumettes and flats)

1. Preheat 2 to 3 inches of oil in a deep fryer, Dutch oven, or large saucepan to 350 degrees F.

2. Make the soy garlic sauce by combing the ingredients in a medium microwave-safe bowl and cook it on high in your microwave for 1 minute. Stir to dissolve the sugar. To make the spicy sauce, add the gochujang and gochugaru to the mixture
before cooking it. Cover the sauce and set it aside.

3. Whisk together 5 ounces of flour and the baking soda in a medium bowl, then whisk in the water. Measure an additional 1 cup of flour into another medium bowl.

4. Drop a several wings into the flour and coat them well with it. Let the wings sit in the flour for a couple minutes, then dip each one into the wet batter and allow the excess batter to drip off. Carefully lower each wing into the oil and cook them in batches for 8 minutes or until the breading is golden brown. Remove the wings from the oil and let them sit out for 4 minutes.

Fry them a second time for 5 to 6 minutes or until browned. Remove the wings from the oil and let them sit for 2 minutes, then brush them on both sides with the sauce. If you’d like to serve more than a few wings at a time, fry them all and hold the unsauced wings in a 250 degrees F oven until they are all fried, then brush them all with sauce before serving.
