CRUST:
3 cups flour
1 tsp salt
1 egg
5 Tbsp water
1-1/2 cup shortening
1 Tbsp vinegar

FILLING:
2 Tbsp flour
3 cups rhubarb, cut up
1-1/2 cup sugar
3 egg yolks
1/2 cup cream

MERINGUE:
3 egg whites
6 Tbsp sugar
1/8 tsp cream of tartar

Crust:
Blend flour, shortening and salt with wire blender. Beat egg with fork, then mix all together with water and vinegar. Add to flour mixture and roll out on a floured board. Line pie crust into pie pan and bake. 400 degrees for about 10 minutes until browned

Filling:
Combine ingredients and cook in a saucepan on the stove. Cook until thick. Cool a while then put in pie crust

Meringue:
Whip egg whites and add sugar gradually, then cream of tartar until egg whites fluffy. Put meringue on the filled pie and bake until golden brown , about 10-12 min. Cool
