8 Russet Potatoes
4 Hard boiled eggs, chopped
1 or 2 Hard Boiled Eggs, sliced for garnish (optional)
Small onion, chopped
3 Celery stalks, chopped
2 Sweet Pickles, chopped fine (optional)
Sweet Pickle juice (liquid from jarred sweet pickles)
Garlic Powder, to taste
Onion Powder, to taste
Salt & Pepper, to taste
Paprika, for garnish
Best Food's Mayonnaise, to moisten

Directions:
Wash the potatoes. Boil, in their skin, until tender, but not mushy. Check by inserting the sharp tip of a small knife or a fork, to check for tenderness.

Allow the potatoes to cool on a rack, until easily handled. With a small paring knife, peel the potatoes. Chop into large bite size chunks.

In a large bowl, add potatoes, chopped hard boiled eggs, chopped onions, chopped celery, chopped sweet pickles, garlic and onion powder, salt and pepper. Add spoonfuls of mayonnaise and mix gently; to the degree of moistness desired.

Garnish by arranging sliced eggs on top and sprinkle with paprika, if desired.
