1 1/2 pounds ground chuck
1 CUP chopped onion
1 1/2 tsp. Cajun Seasoning (or to taste)
1 8 oz. can tomato sauce
1 (14 1/2 oz.) can Cajun-style stewed tomatoes
1 (16 oz.) box red beans and rice mix with seasoning packet
2 cups of water
1 (160z.) can pork and beans

Directions:

Salt and black pepper, to taste
Combine ground chuck and onions in a large soup pot and cook over medium to medium-high heat Until meat has browned. Drain any excess grease. Add remaining ingredients and bring to a boil. Reduce heat to low and cook covered for about 20 minutes or Until the rice is tender. A little grated Cheddar cheese is good sprinkled over the chili after it is spooned into the individual serving bowls.
